These are just my views on the best strategies, but do not get the interviewee to look into the camera - they are not a presenter. If you definitely must be behind the camera, get a 2nd person / chum to do the talking.
Remember you can always edit out your own voice. Naturally, you do not need them drunk, so selected your moment punctiliously. Essentially, you might interview them before the particular rite if you can somehow prepare it, to get that "How are you feeling right now?" query in.
